This elixir is composed of farm-grown fermented guava vinegar, hand-harvested rose petals, and Topanga Canyon honey with a hint of Ceylon cinnamon. This offering beautifully highlights the essence of small-batch craft, with each step of the process involving a closeness to the land and time.
The palette of our oxymel is a culmination of the terroir of our Santa Monica Mountains: from fruit to flower to nectar to microbes, you are tasting the place from which Zuma Canyon Orchids operates.

INGREDIENTS
Guava vinegar
We harvest our guavas weekly for the duration of their season—about two months. The guavas ferment for two months before they are strained and ready to go into a second fermentation cycle. Another two months completes this cycle, at which time the vinegar is combined with raw, local honey, rose petals, and cinnamon and left to macerate for 30 days while the flavors marry. The resulting syrup is a balance of tangy and sweet, alive with probiotics, antimicrobial constituents, and polyphenols.
Honey & Cinnamon
The bees that create the honey for our supplier, Eli’s Bees, feed from black sage, toyon, chamise, and laurel sumac—the floral landscape of our mountains.
Our Topanga Canyon honey contains a hint of Ceylon cinnamon.
Rose Petals
Our roses, grown by Roselane Farm in San Fernando Valley, are tended by hand.
